Improvement of Postharvest Quality and Bioactive Compounds Content of Persimmon Fruits after Hydrocolloid-Based Edible Coating Application

Persimmon fruits are often affected by large postharvest losses due to rapid ripening and the early onset of senescence. To reduce such in fresh fruits, application hydrocolloid-based edible coatings was conducted. Therefore, a plant gum, tragacanth gum (TCG), applied persimmon at 0.5%, 1%, 1.5% TCG concentrations, stored 20 ± 2 °C 80–85% relative humidity for days (analysis 0, 4th, 8th, 12th, 16th, 20th day). As result on there were greatly suppressed respiration rates, ethylene production, weight loss, decay incidence, H2O2 malondialdehyde content. In addition, TCG-coated had higher concentrations bioactive compounds including phenols, flavonoids, carotenoids, ascorbic acid, soluble tannin. Higher enzymatic antioxidant activities lower softening enzyme also recorded fruits. Uncoated quickly lost fruit quality attributes like color, firmness, taste, aroma during storage compared coated ones. Based our findings, use TCG, especially concentration 1% can be recommended as coating maintain nutritional, biochemical, commercial ambient storage.
